In Praise of "Diet for a Small Planet"

On the heels of the EAT-Lancet report, I would like to give a “shout out” to Francis Moore Lappé who over 40 years ago was among the first to bring attention to the environmental impacts of meat production and consumption on a global basis. Her best-selling book, Diet for a Small Planet, first published in 1971 is still a great resource and among my favorites for excellent vegetarian recipes.

A quote from Lappé in the flyleaf is still as relevant today as it was then: “This book is about protein – how we as a nation are caught in a pattern that squanders it: and how you can choose the opposite – a way of eating that makes the most of the earth’s capacity to supply this vital nutrient.”
